VINIFICATION

Destemming of grapes and cold maceration at 10/12° C for 18/36 hours. Alcoholic fermentation at a controlled temperature and racking at the end. Soft pressing of marcs.

AGEING

After the malolactic fermentation in inox silo the wine ages in French durmast wood of medium toasting for 5 months. Then it is bottled and ages in the bottle for 4 months.

In the heart of puglia, a few kilometers from bari, the provincial capital, lies one of the most fascinating and multifaceted lands of our country, the itria valley. The Story

A large and old key opens the door of the antique mill made out of wood, a building that once was the cradle of Masseria Tagaro and where everybody can still see the old wine press, old glass bottles, and different tools for wine production. This is the place where the grapes were once processed and the lives of hard-working men changed by the passion for wine-making. Everything in Masseria Tagaro has been affected by long history and traditions of wine-making in Itria Valley The only thing that has remained the same from year to year is our pursuit for making only the best wines. Today, Masseria Tagaro uses cutting-edge technology to maintain the quality of wine some as it has been for the past three generations. From this long history of passion for winemaking, come the wines of Masseria Tagaro. Wines that contain the unique notes of this spectacular land. 

Passion

In the countryside of Locorotondo where Masseria Tagaro is located and produces its good wines, the 164 country districts are joined by the same passion.- To make wines as they used. People from country districts have a big heart and their faces represent the passing of the time among rows of grapes: every wrinkle tells a story, a harvest. 
Here, we know only one way to make good wine and it is the same used by Masseria Tagaro. In order to celebrate the life and the work of these people, Masseria Tagaro called its wines with the same name as these districts surrounded by vineyards and majestic oak forests. A strong identity that is deeply rooted in the centuries-old nomenclature of this land and a strong link which Masseria Tagaro wants to keep in every drop of its wine. 

Location

Imagine being surrounded by rolling hills dotted with thousands of Trulli pinnacles, with large areas of oak forests between patches of cultivated land bordered by miles of dry stone walls, small precious vineyards, olive and almond trees. Imagine a land between two seas, on a plateau 450 m. above sea level where the thin air and the cool breezes sweep away the heat of summer, mingling scents of jasmine and blooming wistena. It is not a fairy tale: It is the heart of Puglia - The Itria Valley- a land known for its special climate and terroir that is different from the rest of the region.

Here the earth is red because of the presence of iron hydroxide and leaching of calcium bicarbonate. Here, where the "folds' - 'spalle' and the 'ondulations' - 'lame' of the land occurs, the land has been used for cultivation of vines since sixteenth century. And now, the ltna Valley is home to fine wine production thanks to the chemical composition of the soil, which gives the grapes different hints of spices. Among some of most beautiful vi1lages in Italy, like Locorotondo, Cistemino, Martina Franca and Alberobello, we also are located m the Itna Valley.
