Pale yellow gold.

Nose
Powerful and fresh: aromas of citrus fruits, white-fleshed fruits (pear and corner), scents of garrigue and anise, notes of roasted hazelnuts.

Mouth
Great finesse and beautiful minerality, iodine notes with hints of white pepper and flint. A lot of freshness on the finish with notes of acacia honey.

Food and wine pairing and service advice
To be enjoyed with fried scallops, fish in sauce or as an aperitif.

Vinification
The harvest date is only triggered, grape by grape, when the grapes are at optimal maturity and after daily tasting of the berries. The grapes, harvested by hand, are pneumatically pressed as soon as they arrive at the winery. The alcoholic fermentation is 100% made in French oak barrels. Temperature control helps to preserve the freshness and integrity of the aromas. The ageing in barrels lasts between 7 and 8 months until the Spring equinox with regular stirring (for two months).
